I've done about as much as you've done to my 1.9 but its taken me over a year - you're certainly a busy bee! And two Z3s are bound to keep you busy....

May be worth if you have two cars with the same carpets to strip your project out and see if its dry inside. If not at least you can get it all dry then set a day to swap it out with your wet stuff.
It will be the insulation that will be holding water and lots of it.
At least this way you'll get the result and not be off the road, if the carpets different in colour it will dry quick anyway as said its the insulation thats like a very dense sponge so takes a while to dry it.

I can relate to your insurance issue although it is not really that new a problem. Back in 1972ish I had my heart set on a used Triumph Vitesse 2ltr selling for £285. i was 18 at the time and the best insurance quote I could get was £450, so a similar ratio to yours. I ended up with a 13/60 and insured as a named driver on my mother's policy.
Forget about the smaller engine, drive it whenever you can and enjoy fixing it when you need to.

- locked my keys in the boot the other day - something shorted whilst the keys were in and it just locked the boot - had to drill a hole behind the BMW Emblem and stick a small drill bit through to it to open the boot!

My interiorthe seats are red from factory on mine @Faheem - the door cards match too, but others on here from memory have extended the red theme onto the dash / parts of the steering wheel and on leather around the gear knob and handbrake.
There are dye kits available (I'm just about to do a little refurb of the drivers seat bolster) from people like Furniture Clinic and it is possible to change the colour with a little bit of work.
