At a previous employer, where people elected to work Christmas Day and New Year, it was triple time and a day off. That sounds pretty fair otherwise everyone should cover in turn (except those possibly with young kids) as its part of the job and terms. If you don't want to work when its your turn, its an unpaid days leave instead - painful, but fair.
