As long as people buy it there is a market, and that’s the big problem Hugh. I used to buy our Saturday steak from our local butcher who sadly died of a brain tumour a couple of years ago. Shirl gets our steak from Morrison’s now and you cannot buy a steak with a decent bit of fat on it which, in my opinion, gives it taste and keeps it moist. Ivor would leave the meat how I liked it with a bit of fat. You don’t have to eat it but you should have the choice I think.

When we go over to Florida there are many “Steak Houses” but few can cook a steak how we like it. Manny’s Chop house is an exception.

My best mate was a butcher for 40 years supermarkets put him out of business.we still have some of our own lamb in the freezer.but when I was a child we used to keep pigs as well as cattle sheep chickens ducks goats horses really the typical old fashioned family farm.We would kill our own pig and it would last an long time.the sty was ten yd’s from our back door it would eat our left over veg potato peel and corn it would be fat our neighbor who was the local pig killer and barber would come over one day and my dad would lead the pig out as if he was talking it for a walk.we had a sort of lean to by our door and the pig would amble along where without him knowing as the pig sticker was so sharp it would go straight in the jugular catch the blood in a bucket and the pig would go to sleep without knowing it ,not long after that we had to shoot them before the knife .that was the start of a long day boiling water to scrub the pig. And then chopping it up and salting as we didn’t have a freezer some things you had to eat straight away as they wouldn’t keep .The nearest taste to the home salted bacon is Spanish wild boar,but it can never match the taste that seems sweeter as time passes

Well one think that people do not care for is Venison, because they always associate it with a Bambi The local supermarket chain sells it but it’s from New Zealand. Even though we have a large surplus here in the South Downs and New Forest that must be kept under control.

Just out of interest, how many of you have actually tasted venison ?

I watched the programme and I'll keep my views on that to myself, I will say though, meat production is the least of our problems, the worst kind of animal on this planet are humans, for a supposedly intelligent species we do some horrific things to to our environment and the only home we have, we forget we are guests here and share this planet with thousands of other species who suffer at our hands. There are those that say we are killing our planet, we are not! we are not capable of destroying the Earth, we are only capable of rendering it uninhabitable for us, and its other occupants, whatever we do given time the earth will recover, we however most likely will be long gone......The phrase "Hoist with his own petard" springs to mind.

Been involved in farming all my life almost 60 years.What you eat that is produced from most farms in this country has never been so safe and had the highest welfare standards.You can always find some cowboys in every industry but if you want to make a living the better you look after you animals and crops the better yield.Its a fact I can’t complete with beef products from Brazil Argentina,Australia,Namibia or America.when Frankie and I drove across Texas we passed stinking cattle yards that were miles long eating who knows what crap and served up on a huge plate to an unsuspecting public.We get a small EU subsidy to almost make the job pay but I don’t do this for the money but it’s my life.Part of the problem is people want cheap food ,we can produce quality but not cheap,unless we get bigger and more industrial it doesn’t really work in the Welsh hills.Another problem the people who can afford to buy our products will probably eat less of them and the people that can’t will probably carry on eating imported cheaply produced but high mileage alternatives. I’ve shed a tear when I’ve had to take an older animal too market but it’s how we make our living and I know I’ve given it the best of me while it’s been in my care.Im handing over to our son and it’s a weight off my shoulders at my age but if he’s going to last as long as me in the business people will have too make choices on where they buy their food from
Yesterday we ordered Turkey (free range) and Welsh Black for Christmas from a farm shop about 35miles away. A proper farm shop , all the meats and vegs are grown on the farm, with the ham I order that that from @andyglym area, again a very old established butchers.
The question of Vegan is interesting , a very good friend of my daughter was vegan for many years , but on the advice of her doctor reluctantly changed to vegitarian , and now has much better health after years of suffering.
What really annoys me is the way supermarkets modify foods , my wife requires a Gluten Free diet (unlike vegitarian its not a choice ) ,from shreaded cheese containing flour to stop it sticking together , to Marks and Spencer Scrabbled Egg and salmon containing gluten as its made in a factory and comes in powder form. We produce good food , why mess it about.

All in the name of convenience because we don't have time for anything. Hence pre washed vegetables, ready chopped and washed salad greens etc. etc.
We are our own worst enemies to be honest.

Yep had venison steaks, and sausages too. a few others I've tried,
Wild Boar, Bear, Bison, Elk and a favourite, Yak - healthier than chicken :)

I have had it but not for a while, I always buy my meat from the local butcher, must find out where he gets his venison from.

There are many issues around food production caused by the big supermarket chains.
Palm oil - A massive threat to the planet. Manufacturers have started hiding the fact that palm oil is in their products by using the chemical compound names contained within it instead of plain Palm oil.

Many products have undisclosed air-miles attached to them. Flown in from Kenya, Namibia, south america.
You can get any veg now out of season. Yes some are very nice, but necessary? Do we need that?

Supermarkets have cornered the market in meat, fish and veg. They have driven many local shops that sold excellent and often local produce out of business.
Pre-packed veg is often cheaper than loose. How can that be? Many products have massive mileages attached to them.

Supermarkets with large carparks and any new builds should be made to provide market stall space free of charge to local market stall-holders to provide much needed alternative and competition. Indeed - any new supermarkets should have to provide and pay for an indoor facility. Doesn't have to be big, but at least provide some alternative.

Councils that have larger buildings empty due to retail closures could do worse than turn one unit into an indoor market.

Just like our politics - food is totally screwed up, pandering only to the providers not the best for the customer. :(

Biggest problem is that Supermarkets don't approach Farmers and ask "How much do you want for this?". No, they have the approach of "You will take this much!" Theyve been bullying producers for long enough, likely to using cartels to force their will onto the producers. As for getting "out of season" produce, no we don't need it but we have come to expect it regardless.

Apparently, so I've been informed, I've had wild boar, venison, ostrich and skippy on a stick.

I've met a lot of people that don't have time to prepare, cook, and eat decent food. In too much of a hurry to sit in front of a load of cr4p on the telly.:rolleyes:
I can cook you a venison steak and rice quicker than it takes a takeaway to arrive. It’s very simple and easy too. Or you can have it with crusty warmed through bread and garlic butter. Just saying :whistle:

Our local Morrison's a few years ago started to sell "wonky" veg and fruit, loose, dirty and cheap, fine by me a peeled a spud is a spud and a blemished apple still tastes great ... etc etc ... and I was pleased that all veg was being sold not just the pretty stuff favoured by the Cotswolds set :whistle:.... NOW "wonky" veg is clean and packaged and twice the price, sort of makes a nonsense of the initial concept and just smacks of profiteering ....again :facepalm::facepalm:
