Can anyone advise if this handbrake is one piece or if the aluminium handle can be removed to replace with a leather one?

That one looks aftermarket to me. Pull the covering back, check for set screws and if none try twisting and pulling the handle toward the front of the car.
Yeah, it’s not for budging either by hand or wrapping it in a cloth and trying with a set of grips.

If it really doesn't come off whole lever is not that hard to change
I bought a lever with the wooden handle as part of centre console wood conversion didn't want to risk trying to remove it in fear of damaging the wood so changed whole lever.
