Why not a white roof? I've had two cars with white vinyl roof and they looked great. Don't know if you can get a soft top in white mind.

Yes nice interior, but not with that exterior colour. I normally don't like black interiors but I think that's what it should be, simple dyeing job. Oh and a black roof as well. I was considering a burgundy roof on my red zed, but was warned off it, not only because when I saw it in the flesh it looked awful with the red, but the fitters also warned that the burgundy dye tends to be unstable and has a tendency to fade in uv.
We had that on an expensive burgundy carpet which never saw any direct sunlight.

I spilled burgundy on our carpet once...I didn't see any direct sunlight ,either, for a few days, until the swelling around my eyes subsided...We had that on an expensive burgundy carpet which never saw any direct sunlight.
