I suspect it’s mostly to do with your age though. I have declared mine and it made no difference, but I’m 50 and it’s a classic policy with mileage limited to 7.5k a year. I’m sure many people don’t even declare they have them, but I would definitely not recommend that.

As for the increased cost of insurance. This likely isn't an issue with safety. But insurer's statistics likely show that the kind of person who fits spacers is the kind of person who wants to go round corners quicker. But the same could be said for those ford focus drivers who fit dustbin sized tailpipes. In fact any modification even if it doesn't improve performance is a red flag to insurers.

Friends have told me not to declare them but, that’s not the kind of person I am.

I’ve considered classic insurance but the mileage limitations are too strict for me, this is going to be my only car for a while !

Do not listen to your friends. Declare everything, especially at your age.

There is a thread running on another forum where a 60-something had a total loss accident, no fault of his.
Due to not declaring he had some exterior plastic 'bits' on his car, his insurance have cancelled his policy and won't entertain the claim (no fault claim BTW). The only way he can possibly be paid out is by going down a legal route. And he has had his policy cancelled so it will be very, very expensive to get insurance again, even at his age.

It's just not worth the risk.

Use my car as a good example of perfect fitting wheels, no spacers, no camber plates, no shims, no stretch tyres

17x8.5j et41 and 17x9 et26 with 225/45/17 and 255/40/17

- perfection, if I do say so myself.

Remember that offset is relative to wheel width.

Front:

Maximum front is 8 inch with et35 or a derivative of this such as 8.5 et41. This is the maximum flush fitment with the arch.

Rear

My setup is good but the rear has some flexibility. My buddy @Stevo7682 also runs 17x9 but et22, 4mm more poke out from the arch from me and just gets away with it and no more. Ideally he'd want the 4mm back to run a 255 tyre but the 245/40 helps to make this work out.
