Performance Issue

I have had my 1999 2.8 for 18 months and done about 1000 miles.
In my opinion performance from a standing start has degraded recently. I am not trying to burn people off the lights but the car needs to be pushed quite hard to keep up.

in your opinions what process should I follow to start to work through potential causes?
The only two things under the bonnet that needed replacing were the MAF sensor and the fan coupling

First thing I'd do is find a nice straight, traffic free piece of road or track and do some zero to 60 runs to the stop watch just to get my head round what kind of performance I've got before assuming all the horses have bolted. (With and without traction control)
