Why should i pay the extra money for Gas shocks ?

They will be going on the Triumph, not the Z3

Getting from E-Bay the Gas are double the price, what i was wondering is, a car that is not

fast road or track, i was wondering if i should just go oil filled ?

I would fit what it would have had originally Stevie, that is oil filled. Oil filled shocks are generally less "abrupt" in their damping and as such more gentle for an older car.

Depends what you want it for Stevie. If you're wanting your Triumph for a standard nice comfy ride Oil is what I would fit. Gas shocks react quicker than oil but you only need that for performance use really.
