I went for a drive to my office in North Cambridgeshire this morning. When I got to the junction with the A14 it was like the proverbial giant car park a la M25. I dully returned home, not wanting to join the joys of not going anywhere for hours...

I drove for about an hour there and back at, how shall I say, spirited speeds; my right foot seems to be quite heavy… Anyway, when getting back to home I noticed while stopping at traffic lights that the idle speed was not dropping below 2K. Normally, the idle speed is around 800 RPM. Basically, the car was still moving with my foot not touching the accelerator.

After a while I went for another drive and had no issues. Actually, I've had plenty of longer trips in the past, still at the same 'spirited' drive, but never noticed this issue.

Any ideas of what could have caused this?

probably something simple like your throttle wire was sruck. wd40 the connection on the throttle body and for peace of mind remove the idle valve, it is in the front of the engine next left to your intake and maf and spray with a good cleaner.
whatever you do DO NOT open the idle valve. I repeat DO NOT OPEN IT.
some videos in youtube show how to do this, but what they do not say is that it is fragile as a spiders net and it will break the two flimsy plastic thingys that keep it sealed.
i have tried this, ruined two valves (mine and a used one) and had to pay € 369 for an original new one.
Did you check for any codes?

Yeah, I checked — no codes.

Anyway, thanks. I will clean the valve and look at the connection to the throttle body.

I have had similar issue in the past - definitely not a stuck throttle cable for me...

Always after a "spirited" drive, as come to a stop the revs drop to 800rpm as expected, car rolls to a stop and quite literally the "moment" the car comes to rest, the revs jump up to 2000 rpm (without me touching the throttle).

Has happened a handful of times, no codes. Hasn't done it for a while, though not really used it all that much in that time either - will see if it happens during the ZORG run to Scotland next month...
