Ok, usual birdstrike is not uncommon in my area - but this one was nasty.

It's left a sap like residue on the bonnet and i'm left trying to wear it down (by hand) with SRP. Should I continue or will I need something stronger?

What is next in terms of abrasiveness? T-Cut??

SRP has only very fine abrasives and also fillers. Should do ok but evidently not. T-Cut will remove far more clear coat than is actually needed. If you have a bottle of some light cutting compound (megs 105 or something) that should do. if not just tread carefully with the t-cut until its allmost gone then refine it with the SRP.
